What the Albion deliberately does not have is as important as what it does. There is no on-site restaurant, no pool, no spa, and no gym. Instead, there is the Honour Bar, a beautifully stocked self-serve drinks cabinet where you note your room number and pour your own cocktail, exactly as you would in a friend's home. There is a daily gin and tonic trolley that rolls through the sunken lounge (the hotel calls it the conversation pit) between four and six each afternoon, featuring rotating Australian craft gins with CAPI sparkling beverages. And there is the rooftop garden, an olive-tree-lined terrace with views across Surry Hills and the city skyline that feels like a secret even the neighbourhood does not know about. The hotel leans into its surroundings rather than competing with them: Shaffa, the excellent Middle Eastern restaurant next door, shares the heritage building and functions as an unofficial house restaurant, serving dishes like kingfish saffron ceviche, fresh focaccia, and oysters with mint lemon granita.
