The seven suites occupy the upper floors of the mill, each individually designed to reflect the building's industrial past while feeling thoroughly contemporary. Suite 1 is the standout, with a bathtub, sweeping Tamar River views, and the sense of being suspended between water and sky. Suite 3 preserves original mill wheels and beams in a premium top-floor position. Suite 6, the most spacious, opens to a courtyard and is both accessible and pet-friendly. Every room has its own personality, from moody timber interiors to light-filled river-facing windows, and the quality of materials and detailing is well above what the room count might suggest.

Bianca Welsh, who took out Young Australian Restaurateur of the Year at 26, runs front of house with warmth and precision. James Welsh brings an infectious enthusiasm for wine that turns a simple glass recommendation into a conversation worth having. Launceston itself is an underrated base for exploring northern Tasmania. Cataract Gorge, a dramatic natural formation with walking trails and a chairlift, sits minutes from the city centre.
